Recipe for “Busy Day Soup” – Simple Soup for a Busy Day

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 large carrot, thinly sliced
  • 1 red bell pepper, diced
  • 1/2 zucchini, sliced
  • 1 small potato, cubed
  • 4 cups chicken or vegetable broth
  • 1 can chickpeas (400g), drained and rinsed
  • 1/2 cup green beans, fresh or frozen
  • 1/2 cup corn kernels
  • 1 tomato, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon chili powder (optional)
  • Fresh cilantro or basil for garnish

Instructions:

  1. Sauté: Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until the onion is soft and translucent (about 2-3 minutes).
  2. Cook the Vegetables: Add the carrot, bell pepper, zucchini, and potato to the pot. Cook for about 5 minutes to allow the vegetables to soften slightly.
  3. Simmer the Soup: Pour in the broth and bring it to a boil. Once boiling, reduce the heat to low and let it simmer for 15-20 minutes or until the vegetables are tender.
  4. Add Chickpeas and Seasoning: Add the chickpeas, green beans, corn, and tomato. Season with salt, pepper, and chili powder (if you like a bit of heat). Stir well and cook for another 5 minutes.
  5. Finish and Serve: Taste and adjust the seasoning if necessary. Garnish with fresh cilantro or basil before serving.
